Your Vegas Connection
A Caribbean reimagining of the American steakhouse
Maroon by Kwame Onwuachi brings an Afro Caribbean perspective to the Las Vegas steakhouse. Located inside SAHARA Las Vegas, the restaurant connects premium cuts and seafood with Jamaican flavors, live fire cooking and the history of jerk traditions.
Chef Kwame Onwuachi
James Beard Award winning chef Kwame Onwuachi is known for building menus around personal history, cultural memory and bold flavor. Maroon marks his Las Vegas restaurant debut and extends that approach into a polished Strip dining room.
Cooking with fire and spice
A custom jerk pit anchors the culinary direction. Guests can expect smoke, spice and Caribbean techniques across steak, chicken, seafood, vegetables and shareable accompaniments. The experience is intentionally different from the familiar formula of a classic Las Vegas steakhouse.
A restaurant for occasions and groups
Maroon can fit celebratory dinners, executive meals and elevated group occasions. Private dining areas can support smaller events, while large party experiences may use curated menus. Confirm the current format, pricing, beverage terms and room availability directly with the restaurant.
Build an evening at SAHARA
The SAHARA location allows guests to connect dinner with a hotel stay, casino gaming, a show, cocktails or seasonal programming at The Pool. Chickie’s and Pete’s provides a more casual sports focused alternative within the same resort.
Reserve around the complete experience
Menus, hours, large party offerings and reservation availability can change. Review the official Maroon listing and current reservation terms before planning the evening.
